Meatless What I Eat In A Week

Have you ever wanted to try a meatless diet but aren’t really sure where to start? I captured photos of some of meals for food prep ideas! For clarification, I am a Pescatarian. I still enjoy fish. Also, I do not follow a vegan diet—I still enjoy eggs and dairy products on occasion. Still, I try and opt for plant based meals whenever possible!

Brunch Time!

Scrambled Eggs, sweet potato hash, Trader Joe’s Gluten Free Pancakes… oh, and a Prosecco Mimosa

On weekends, I usually prepare a hearty breakfast to get me through the day until dinner time. I love making sweet potato hash and tossing in onions, mushroom, garlic and bell peppers to round out the flavor.

Salads On Salads On Salads!

Dom’s Cobb Salad: Romaine lettuce, bell peppers, red onions, black olives, carrots, Roma tomatoes, jalapeños, boiled eggs, bleu cheese topped with freshly ground black pepper, drizzled with Italian dressing

I love a good salad! They’re easy to make, easy on my digestive system and oh so flavorful! I always buy my romaine lettuce whole and chop and rinse it at home. I find the flavor more robust and the lettuce is crunchier!

Craving Meat?

I’m a texture eater and sometimes prefer a heartier option. This is usually when I opt for a piece of fish or faux meat options. Gardein, Morning Star, and Beyond Meats have very tasty meat inspired options!

Gardein Turk’y lightly breaded cutlets and gravy, potato salad, and broccoli

Lightly seasoned noodles topped with Gardein Meatless Meatballs tossed with bell peppers, Bella mushrooms, onions and red sauce

Okay, This One Is Vegan!

Although I don’t strictly follow a vegan diet, plant based options are always welcome!

Quinoa seasoned with freshly squeezed lemon and garlic, roasted brussel sprouts, sautéed shiitake mushrooms and onions with a splash of Sweet Chili Sauce (Sot Ot Ngot)

Açaí Me, Please!

I used to spend a fortune on these bowls at local smoothie stands. During quarantine, I was craving one so badly that I finally decided to attempt one!

Base: Blend of açaí purée, frozen blueberries, frozen strawberries, frozen banana, almond or oat milk, honey Topping: Granola, Blueberries, strawberries, 1/2 banana, 1/2 kiwi, 2 orange slices, chopped coconut, drizzle of honey

Nice Cream

Blend of frozen bananas, oat or almond milk, a splash of honey, and ice
